Our kids LOVE cucumbers. It is their #1 go-to snack. So naturally, when planting our first vegetable garden, we bought a few cucumber plants. Little did we know that they would THRIVE and we would be faced with a new dilemma. What the heck do you do with so many cucumbers?! One can only consume so many dipped in hummus or tossed in a garden salad. “We should have planted zucchini!” I exclaimed, because I know there are so many different ways to cook with it.       This is our first year and we are loving it! We have done tomatoes in pots in the past, but this year our garden is keeping us well nourished! Good luck next year!

    I too love cucumbers so thank you for all the awesome suggestions on what to do with them. I will often make cucumber water and stick it in my fridge to enjoy throughout the day. I’m doing some research for a blog post on summer drinks and evidently a popular drink in india in the summer is a cucumber cooler (sadly without any alcohol)

    I have never grown cucumbers. I had no idea they grow in such large bunches – kind of like zucchini!. Great recipes – I love the looks of the salad!

      Yes- they are crazy. And they hide! You wouldn’t think it would be so hard to miss a foot long cucumber, but we seriously have to search for them!

      I would love to try kale, lettuce, etc. next year. We tried a lettuce mix but did it too early and it tasted like horseradish. Blech.

      If you have a small space or a deck, try earth boxes. We used them in our townhouse and had amazing results.
